6-8 large, juicy plums

1/2 C brown sugar

1/4 c maple syrup

Pinch salt

Stone the plums and cut into bite sized pieces.  Add the sugar, maple syrup and salt, mix around and let sit for an hour or so.  Add more maple syrup of things are a bit "dry".

 

While plums are marinating..... mix together...

3/4 c whole wheat pastry flour

1 c rolled oats

3/4 c almond flour (ground almonds)

3/4 c brown sugar (or more if you like things really sweet!)

1/2 tsp salt

1/2 tsp cinammon

Cut in 1 1/4 sticks butter until mixture binds together in a crumbly mix.

Toss in 1/2 c sliced almonds

 

Put marinated plums into a 9"x9" glass pan.

Sprinkle crumb mixture over the top.

Sprinkle a few extra sliced almonds over top for decoration.

Bake 350F 15 mins, then reduce heat to 300F and bake for 30 more mins or until golden brown on top and plums are bubbling nicely (you can see that happening through the glass).  Cover the top with foil if they're browning too fast so nothing burns while you finish the cooking time.

 

Remove from oven.  Let rest for 30 mins.

Serve plain, or with vanilla ice cream or unsweetened whipped cream.

 

Freezes beautifully, though I doubt you'll have leftovers.  :)
